It's a party-sized prepared mix that's packed with the flavours of the Christmas time, making it perfect for hosting a festive gathering. Reserve the remaining cordial you can use for morning drinks, puddings, or for more rounds of this cocktail.
Bikini Recipe
Makes enough for 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Citrus Syrup: Combine the listed components inside a pot, bring to a light boil, mixing so the sugar melts. Then, remove from the stove and let it to cool completely. Decant to a sterilised bottle, cap it keeping it in the fridge, it will last for up to one month.
For the Premix: Combine all the liquids into one big jug, allow it to infuse for an hour, then strain preferably using muslin, making it fully clarified.
When ready to serve: Measure 85ml from the cocktail base into a mixing glass containing ice, and agitate carefully for one minute to chill. Strain to a cold coupe glass or similar, decorate with the cranberries and finish with a light spray of mandarin oil over the drink.
